Green Bean Mushroom Pie

Ingredients

– 2 cups fresh green beans, trimmed and chopped
– 1 cup mushrooms, sliced (button or cremini work well)
– 1 medium onion, diced
– 3 cloves garlic, minced
– 1 cup cream or half-and-half
– 1 teaspoon dried thyme
– Salt and pepper to taste
– 1 pre-made pie crust (store-bought or homemade)
– 1 cup shredded cheese (optional, but I love using cheddar or Gruyère)

Equipment Needed

– A pie dish (9-inch)
– A large skillet
– A mixing bowl
– A wooden spoon or spatula
– A knife and cutting board

Step-by-Step Instructions

To start, preheat your oven to 375°F (190°C). In my kitchen, the aroma of preheating can be the most inviting scent, making me feel giddy with anticipation. In a large skillet, heat some olive oil over medium heat, then toss in the diced onion and garlic. Sauté them until they become soft and fragrant, about 3-4 minutes. Next, add the sliced mushrooms to the skillet and continue to cook until they get a lovely brown color – about 5-6 minutes. The combination of onion, garlic, and mushrooms will already have your taste buds dancing! (See the next page below to continue steps…)
