Maryland Crab Vegetable Soup

Step-by-Step Instructions

We start by building a flavor base, which is the secret to any great soup. In my large Dutch oven, I heat the olive oil over medium heat. I add the diced onion, carrots, and celery—what chefs call a sofrito or mirepoix. I sprinkle them with a little pinch of salt to help them sweat, not brown. I stir them frequently, listening to the gentle sizzle, and cook for a good 8-10 minutes until the onions are translucent and the carrots have just started to soften. Then, I add the minced garlic, stirring for just one minute until fragrant. That first smell of garlic hitting the warm oil is my favorite kitchen signal that something wonderful is beginning.

Now, it’s time to create the broth. I add the diced potatoes, the entire can of diced tomatoes with their juices, and the broth to the pot. The liquid should just cover the vegetables. Next come the seasonings: I add the Old Bay, dried thyme, and the bay leaf. I give it all a good stir, scraping up any bits from the bottom of the pot. I bring the soup to a lively boil, then immediately reduce the heat to a gentle, steady simmer. I cover the pot partially with a lid, leaving a small gap for steam to escape. This is where patience comes in. I let it bubble away for about 20-25 minutes, just until the potatoes and carrots are fork-tender.

Once the heartier vegetables are tender, I add the quicker-cooking components. I stir in the corn and lima beans (or green beans). These just need time to heat through and become tender-crisp, about 5-7 minutes more of simmering. This is when I do my first taste test. The broth should be rich and deeply flavored from the vegetables and Old Bay. I add salt and black pepper carefully, remembering that the crab will add its own subtle saltiness.
