Step-by-Step Instructions

Let’s start with the foundation: the brownie layer. I always line my 8×8 pan with parchment paper, leaving an overhang on two sides. This is my non-negotiable trick for perfect, clean slices later. In a medium bowl, I whisk together the melted butter, sugar, and vanilla extract. It will look grainy and separated at first, but that’s okay. Then, I whisk in the eggs, one at a time, until the mixture becomes smooth, thick, and glossy. Next, I sift in the cocoa powder, flour, and salt directly over the wet ingredients. I switch to a spatula and fold gently until the last streak of flour disappears. The batter will be thick and luxurious.

I pour the thick batter into my prepared pan and smooth the top. Then, into a preheated 350°F oven it goes for 20-25 minutes. Here’s the key test: a toothpick inserted into the center should come out with a few moist crumbs attached, but not wet batter. I learned the hard way that overbaking makes a dry base. I let the brownie cool completely in the pan on a wire rack. Rushing this step is the biggest mistake—if the mint layer goes on a warm brownie, it will melt into a mess.

While the brownie cools, I make the mint cream layer. This is where using true peppermint extract, not a generic “mint” extract, is crucial. Peppermint is clean and bright; other mints can taste medicinal. In a bowl with my mixer, I beat the softened butter until creamy. Gradually, I add the sifted powdered sugar, milk, and peppermint extract. I beat on medium-high for a full two minutes until it’s incredibly light, fluffy, and spreadable. If I want that classic pale green color, I add a single drop of food coloring and beat it in.
