Step-by-Step Instructions
To start, I recommend preheating your oven to 350°F (175°C). While that’s heating up, I like to get my sweet potatoes boiling. If you don’t have any pre-cooked sweet potatoes, peel and dice one large sweet potato, boil it in salted water until tender, and then mash it good and smooth. In a large mixing bowl, combine your granulated sugar, brown sugar, and vegetable oil, beating it until well-blended. Next, add the eggs and vanilla, mixing until everything is creamy and smooth.
