Summer Peach Cake Recipe

Ingredients

– 3 large ripe peaches, peeled and diced
– 1 cup granulated sugar
– 1/2 cup unsalted butter, softened
– 2 large eggs
– 1 teaspoon vanilla extract
– 1 1/2 cups all-purpose flour
– 1 1/2 teaspoons baking powder
– 1/2 teaspoon baking soda
– 1/4 teaspoon salt
– 1/2 cup buttermilk

Equipment Needed

– A mixing bowl
– A hand mixer or stand mixer

– A 9-inch round cake pan
– Parchment paper (optional, for easy removal)
– A cooling rack

Step-by-Step Instructions

First, preheat your oven to 350°F (175°C) and grease your cake pan. I love to use parchment paper for easy removal, so I line the bottom as well. In a mixing bowl, cream the softened butter and sugar together using a hand mixer until it’s light and fluffy. This usually takes about 3 to 4 minutes. The sweet, buttery aroma starts to fill my kitchen, and I can hardly wait to get to the next step! Then, add the eggs one at a time, mixing well after each addition.
