Strawberry Shortcake Earthquake Cake

Ingredients

– 1 box of yellow cake mix
– 1 cup of water
– 1/3 cup of vegetable oil
– 3 large eggs
– 1 package (8 oz) cream cheese, softened
– 1 cup of powdered sugar
– 2 cups of sliced fresh strawberries
– 1 cup of whipped topping (or whipped cream)
– 1 tsp vanilla extract
– 1/4 cup of strawberry preserves
– Optional: fresh mint for garnish

Equipment Needed

– Mixing bowls
– Electric mixer
– 9×13 inch baking dish
– Rubber spatula
– Knife for slicing strawberries
– Measuring cups and spoons
– Serving plate

Step-by-Step Instructions

To start, preheat your oven to 350°F (175°C). In a large mixing bowl, combine the cake mix, water, vegetable oil, and eggs. Beat the mixture using an electric mixer until smooth, about 2 to 3 minutes. The batter will be thick and creamy—perfect for holding all those delicious strawberries! While the cake mix is coming together, I like to prepare the strawberries by washing and slicing them. Oh, the smell of fresh strawberries is simply intoxicating!
