Ingredients
- 4 large potatoes, peeled and diced
- 2 cups cooked chicken, shredded (I like using rotisserie chicken)
- 1 cup cooked bacon, crumbled
- 1 cup ranch dressing
- 1 cup shredded cheddar cheese
- 1 teaspoon garlic powder
- Salt and pepper to taste
- 2 tablespoons chopped green onions (for garnish)
Equipment Needed
- Large pot for boiling potatoes
- Baking dish (9×13 inch works well)
- Mixing bowl
- Spoon for mixing
- Aluminum foil (to cover while baking)
Step-by-Step Instructions
To start, I take my large pot and fill it with water to boil. Once the water is boiling, I add the diced potatoes along with a pinch of salt. I let them cook for about 15-20 minutes until they’re tender but not falling apart. During this time, I can almost smell the earthy aroma of the potatoes filling my kitchen. Once they are done, I drain them and set them aside. (See the next page below to continue steps…)
