Ingredients
– 2 cups mashed sweet potatoes (about 2 large sweet potatoes)
– 1 cup buttermilk
– 1 cup granulated sugar
– 1/2 cup light brown sugar
– 3 large eggs
– 1 teaspoon vanilla extract
– 1 teaspoon ground cinnamon
– 1/2 teaspoon ground nutmeg
– 1/4 teaspoon ground ginger
– 1/4 teaspoon salt
– 1 unbaked pie crust (store-bought or homemade)
Equipment Needed
– Mixing bowl
– Potato masher or blender
– Measuring cups and spoons
– Whisk
– 9-inch pie dish
– Oven
Step-by-Step Instructions
First, start by preheating your oven to 350°F (175°C). While that’s heating up, peel and chop your sweet potatoes, then boil them in a pot of water until they’re fork-tender, about 15-20 minutes. Drain the water and mash them until smooth. You can use a potato masher or a blender for this. The smoother, the better! Once they’re mashed, let them cool slightly before mixing them with the other ingredients. (See the next page below to continue steps…)
