Classic Rhubarb Crisp

Ingredients

– 4 cups fresh rhubarb, chopped into 1-inch pieces
– 1 cup granulated sugar
– 1/4 cup all-purpose flour
– 1 teaspoon vanilla extract
– 1 cup rolled oats
– 1/2 cup all-purpose flour (for topping)
– 1/2 cup brown sugar, packed
– 1/2 teaspoon ground cinnamon
– 1/4 cup unsalted butter, melted

Equipment Needed

– Mixing bowls
– Baking dish (9×13 inch recommended)
– Spoon or spatula for mixing
– Measuring cups and spoons
– Knife and cutting board for chopping rhubarb

Step-by-Step Instructions

To start, preheat your oven to 350°F (175°C). I love the anticipation of that first warm whiff of the oven when I’m baking! In a large mixing bowl, combine the chopped rhubarb, granulated sugar, 1/4 cup of flour, and vanilla extract. Toss them gently until the rhubarb is well-coated and the sugar has started to draw out some of its juices. It should look a bit syrupy. Pour this mixture into your greased baking dish and spread it out evenly. (See the next page below to continue steps…)
