Ingredients
- 2 cups cooked, shredded chicken
- 3 cups broccoli florets (fresh or frozen)
- 1 cup heavy cream
- 1 cup shredded cheddar cheese
- 1/2 cup cream cheese, softened
- 1/2 cup grated Parmesan cheese
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- Salt and pepper to taste
- 1 teaspoon olive oil (for greasing the baking dish)
Equipment Needed
- 9×13 inch baking dish
- Mixing bowl
- Whisk
- Baking sheet (optional, if roasting broccoli)
- Oven
Step-by-Step Instructions
First, preheat your oven to 350°F (175°C) and generously grease your baking dish with olive oil. If you’re using fresh broccoli, you can toss it in the oven for about 10-15 minutes to slightly roast it. This gives the casserole a lovely caramelized flavor that I absolutely adore. In a large mixing bowl, combine the cooked chicken, broccoli, heavy cream, cream cheese, garlic powder, onion powder, and half of the cheddar and Parmesan cheese. Stir everything together until it’s evenly mixed and creamy. (See the next page below to continue steps…)
