Step-by-Step Instructions
The first step I take when making my Creamy Burrito Casserole is to gather all the ingredients and equipment; it really sets me up for success. I heat up a large skillet over medium heat and add a tablespoon of olive oil to coat the bottom. Then, I toss in the diced red onion and bell peppers, letting them soften for about five minutes. The colors start to brighten, and I can smell that wonderful aroma already! I add in the ground beef, breaking it apart with my spatula until it’s golden and cooked through. Make sure to drain any excess fat!
Once the meat is browned, I sprinkle in the taco seasoning, mixing it in well with the veggies and beef. At this point, I add the black beans, diced tomatoes, and corn, stirring everything together to create a bubbly, flavorful mixture. I let it simmer for another 5 minutes; this is when the flavors deepen and come together beautifully. I can tell it’s almost time to layer the casserole, and my kitchen smells like a fiesta!
Now comes the fun part: assembling the casserole! I take my 9×13 inch baking dish and start with a layer of tortillas at the bottom. I often rip the tortillas to fit them snugly, and don’t worry about making it look perfect. Over the tortillas, I spoon half of the meaty mixture and spread it out evenly. The next step is to dollop half of the sour cream and sprinkle a cup of shredded cheese over that.
