3-Ingredient Pomegranate Cheesecake

Next, I preheat my oven to 170°C (340°F) and line a small baking pan with parchment paper.

I place the softened cream cheese in a large mixing bowl and beat it until it becomes completely smooth and creamy. Softened cream cheese makes it much easier to achieve a lump-free batter.

Then I gradually add the sweetened condensed milk and mix until everything is fully incorporated. The mixture should look smooth, thick, and creamy.

Once the pomegranate reduction has cooled, I slowly add it to the cream cheese mixture. I mix gently until the pomegranate juice is evenly distributed and the batter takes on a beautiful light fruity color.

I pour the finished batter into the prepared baking pan and gently smooth the top with a rubber spatula.

I place the pan in the preheated oven and bake for about 35 to 40 minutes, or until the edges are set while the center still has a slight jiggle.

After baking, I remove the cheesecake and let it cool completely at room temperature. I allow it to cool before moving it to the refrigerator so the texture can settle properly.

Once cooled, I refrigerate the cheesecake for at least 2 to 4 hours. For the best texture, I prefer chilling it overnight.

When I’m ready to serve it, I slice the cheesecake while chilled and enjoy the creamy filling with its subtle pomegranate flavor.

I recommend using 100% pomegranate juice when possible for the most natural and vibrant flavor.

Make sure the reduced juice has cooled completely before mixing it into the cream cheese. Adding hot liquid can affect the texture of the cheesecake.

Use softened full-fat cream cheese for the smoothest and richest result.

Don’t reduce the pomegranate juice too aggressively. The goal is to concentrate the flavor while keeping enough liquid for the cheesecake batter.

Avoid overbaking. The center should still have a slight jiggle when the cheesecake comes out of the oven.
