3-Ingredient Blueberry Cheesecake

Next, I preheat my oven to 170°C (340°F) and line a small baking pan with parchment paper. Having the pan ready makes the process easier once the batter is mixed.

I place the room-temperature cream cheese in a large mixing bowl and beat it until it becomes completely smooth and creamy. Using room-temperature cream cheese helps prevent lumps and creates a smoother filling.

Then I gradually add the sweetened condensed milk and mix until it is fully incorporated. The mixture should become thick, smooth, and creamy.

Next, I add the fresh blueberry puree and gently mix until the puree is evenly distributed throughout the batter. The cheesecake mixture should take on a beautiful blueberry color.

I pour the batter into the prepared baking pan and use a rubber spatula to gently smooth the top.

I place the pan in the preheated oven and bake for about 35 to 40 minutes, or until the edges are set while the center still has a slight jiggle.

After baking, I remove the cheesecake from the oven and let it cool completely at room temperature. I allow it to cool before transferring it to the refrigerator.

Once cooled, I refrigerate the cheesecake for at least 2 to 4 hours. For the best texture, I like to chill it overnight.
