Walking Taco Casserole

Ingredients

  • 1 pound ground beef
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (15 oz) corn, drained
  • 1 can (10 oz) diced tomatoes with green chilies
  • 1 packet taco seasoning
  • 2 cups shredded cheddar cheese
  • 1 cup crushed tortilla chips
  • 1 cup salsa
  • Optional toppings: sour cream, jalapeños, sliced olives, or diced green onions

Step-by-Step Instructions

First, I like to start by preheating my oven to 350°F (175°C), so it’s nice and toasty for the casserole. In a large skillet over medium heat, I brown the ground beef, breaking it apart with my spatula as it cooks. Once it’s nice and fully cooked, I drain any excess fat.
