Let’s start by getting our star ingredient ready. Grab your skillet and cook the breakfast sausage over medium heat, breaking it up with a wooden spoon as it browns. You want it to be fully cooked, crumbled into small, bite-sized pieces, and nicely browned for maximum flavor. This is not the time to rush. I made that mistake once and ended up with pale, bland-tasting sausage bits that got lost in the muffin. Once it’s beautifully browned, drain off any excess grease in a colander and let the sausage cool for a few minutes. A hot tip: I spread it out on a paper towel-lined plate to cool faster. If you add piping hot sausage to the egg mixture, you risk starting to cook the eggs prematurely.
While the sausage cools, let’s prepare our simple batter. In your large mixing bowl, crack in the four eggs. Give them a good, vigorous whisk until they are completely smooth and uniform in color—no streaks of egg white should remain. This is the base that binds everything together. Now, sprinkle the cup of Bisquick baking mix over the beaten eggs. Using a spatula or wooden spoon, gently fold and stir the mixture.
