Ingredients
– 6 cups Rice Krispies cereal
– 1 cup mini marshmallows
– 1/4 cup unsalted butter
– 1 package (8 ounces) cream cheese, softened
– 1/2 cup powdered sugar
– 1 teaspoon vanilla extract
– 1 cup heavy cream
– Optional: chocolate chips or fruit for topping
Equipment Needed
– Large mixing bowl
– Microwave-safe bowl
– 9-inch springform pan
– Mixing spoon or spatula
– Electric mixer
– Measuring cups and spoons
Step-by-Step Instructions
Let’s get started! First, in a microwave-safe bowl, melt together the unsalted butter and mini marshmallows in the microwave. I usually heat them for about 30 seconds, then stir, and heat again if necessary until it becomes a smooth mixture. Once melted, pour this gooey mixture over the Rice Krispies in a large mixing bowl, and mix until the cereal is fully coated. Press this mixture evenly into the bottom of your springform pan to form the crust. I like to use my hands (lightly buttered, of course!) to pack it down nicely and evenly.
