Step-by-Step Instructions
Our adventure begins in one big pot. In your large, heavy-bottomed pot, combine the butter, granulated sugar, brown sugar, corn syrup, and sweetened condensed milk. This is your caramel base. Place it over medium heat and stir constantly with your wooden spoon. I cannot stress this enough: you must stir from the moment it goes on the stove. The sugars and dairy can scorch in an instant if left unattended. You’ll watch the butter melt and the mixture start to bubble gently. Keep stirring—this is where patience pays off. Now, we reach the most critical part: the boil. Once everything is melted and combined, bring the mixture to a full, rolling boil. As soon as you see large bubbles breaking the surface, start your timer. You need to boil it for exactly one minute, stirring non-stop. I set a kitchen timer because guessing is a recipe for disaster. I tested boiling for 30 seconds and 90 seconds. At 30 seconds, the cookies were too soft and wouldn’t hold shape; at 90 seconds, they were rock-hard. The perfect one-minute boil is the secret to that legendary chewy-but-crunchy texture. After the minute, immediately remove the pot from the heat.
This next step is where the magic happens fast. Quickly stir in the creamy peanut butter, vanilla extract, and kosher salt into the hot caramel.
