The 3 Main Types of Eggs
Pastured eggs stand at the top of the pyramid. These hens roam freely outdoors, eating insects, seeds, and fresh greens. Their yolks are typically a deep orange—a clear sign of carotenoids, vitamin A, vitamin E, and omega-3 fatty acids. They offer the richest nutrition, the best flavor, and the highest health benefits.
Caged eggs, on the other hand, come from hens kept in tight enclosures with limited movement and a monotonous grain diet. These eggs tend to have pale yellow yolks, fewer vitamins, and lower omega-3 levels. They’re the most available—and the least nutritious.
Free-range eggs fall between the two. These hens have some outdoor access and occasionally eat insects, but they still rely heavily on grains.
