Step-by-Step Instructions

First, I get all my vegetables prepped—dicing the onion, peppers, and tomato, and mincing the garlic. Having everything ready to go is key because this recipe moves quickly. I then heat my large, deep skillet over medium-high heat. If I’m using lean meat or a non-stick pan, I add the oil. If my meat is fatty, I add it directly to the dry pan. I brown the minced meat, breaking it up with my spoon until it’s no longer pink. This takes about 5-7 minutes. I’ve learned that getting a good sear on the meat adds incredible flavor to the whole dish, so I don’t rush this step.

Next, I push the meat to one side of the pan and add the diced onion and peppers (and a little extra oil if the pan seems dry). I sauté them for 4-5 minutes until they start to soften. Then, I stir in the garlic and tomato paste, letting them cook for a full minute until fragrant. That minute of cooking the tomato paste is magical—it deepens its color and sweetens its flavor, removing any raw taste. I then add the diced tomato, salt, pepper, and dried oregano, stirring everything together until the tomato begins to break down slightly.

Now, for the clever part. I break my lasagna noodles into large pieces and scatter them evenly over the meat and vegetable mixture. I don’t layer them neatly; I just create a relatively even layer. Then, I carefully pour the 3.5 cups of water or broth over everything. The liquid should just barely cover the noodles. I bring the whole pan to a boil, then immediately reduce the heat to a low simmer and cover it tightly with a lid. I set a timer for 20 minutes.
