Ingredients
- 1 cup dark chocolate (70% cocoa)
- 3 large eggs, separated
- 1/2 cup granulated sugar
- 1/2 cup heavy whipping cream
- 1 cup mascarpone cheese
- 1 cup fresh or frozen cherries, pitted and chopped
- 1 tablespoon cherry juice or liqueur (optional)
- 1 teaspoon vanilla extract
- A pinch of salt

Step-by-Step Instructions
To start, I like to melt the dark chocolate. You can do this over a double boiler or in the microwave gently, checking every 30 seconds until just melted. Once melted, let it cool for a few minutes. Meanwhile, I separate my egg whites and yolks into two large bowls. With my electric mixer, I beat the yolks with half of the sugar until they’re pale and thick.
