Step-by-Step Instructions
I always start by browning the ground beef, and trust me, this step is worth the extra pan. I heat my skillet over medium-high heat, add the beef and the diced onion, and cook until the beef is no longer pink and the onions are soft and fragrant. As it cooks, I break the beef up with a wooden spoon. This is where the first layer of flavor is built. Once browned, I carefully drain the excess grease. Skipping this drain was a mistake I made once, and the soup was too oily.
While the beef is browning, I prep my potatoes. I peel and dice them into hearty, one-inch chunks. I don’t make them too small, or they’ll turn to mush over the long cook time. The potatoes will break down a little, which naturally thickens the soup, but I want distinct, tender pieces in my bowl. I add the diced potatoes directly to the bottom of my slow cooker. They form a hearty base layer.
To the slow cooker on top of the potatoes, I add the three cans of diced tomatoes with all their juices. Then, I spoon the drained, browned beef and onion mixture over the tomatoes. I sprinkle the Italian seasoning, salt, and pepper evenly over the beef. Next, I pour in the four cups of beef broth. The liquid should just about cover the ingredients. Finally, I place the entire bag of frozen mixed vegetables on top. I do not stir yet. This layering method helps the vegetables on top steam perfectly without overcooking.
I place the lid on my slow cooker and set it to cook on LOW for 7-8 hours. About halfway through the cooking time, I’ll give everything a gentle stir to incorporate the frozen vegetables into the broth. The soup is done when the potatoes are fork-tender and the flavors have married into a rich, savory harmony. I give it one final taste and adjust the salt and pepper if needed.
