Equipment Needed
- Extra-large mixing bowl (I mean it—go bigger than you think!)
- Large rimmed baking sheets (2-3)
- Parchment paper or wax paper
- Heatproof bowl for melting (or double boiler)
- Rubber spatula or large spoon
- Measuring cups
Step-by-Step Instructions
My first step is always to prep my space, because once you start, things move quickly. I line two large baking sheets with parchment paper—this is crucial for easy cleanup and release. Then, I pour the Corn CHEX, Cheerios, mini pretzels, and peanuts into my biggest mixing bowl. I use my hands to gently mix them, trying not to crush the cereals too much. The sound is already so festive! I hold back the M&M’s for now, as adding them too early can cause the colors to bleed in the warm coating.
Next, I tackle the almond bark. I break it all into chunks and melt it in a heatproof bowl. My preferred method is using the microwave at 50% power in 30-second bursts, stirring vigorously between each. The first time I did this, I used full power and ended up with a scorched, grainy mess—a hard lesson learned. Low and slow is the key. You want it just melted and smooth, like a velvety white lava. The smell is incredible.
Now for the fun, messy part. I pour the melted almond bark over the dry mixture in the bowl. Working quickly with a rubber spatula, I fold and turn everything, coating as evenly as possible. It’s a bit of an arm workout! You’ll see the glossy white coating envelop every piece. Once it’s about 75% coated, I quickly stir in the M&M’s. Adding them at this stage keeps their colors bright and prevents melting streaks.(See the next page below to continue…)
