Ingredients
– 4 large russet potatoes
– 1 pound ground beef or turkey
– 1 packet taco seasoning
– 1 cup shredded cheddar cheese
– 1 cup sour cream
– 1 cup diced tomatoes (fresh or canned)
– ½ cup sliced green onions
– 1 teaspoon olive oil
– Salt and pepper to taste
Equipment Needed
– Large pot for boiling potatoes
– Skillet for cooking meat
– Baking dish
– Oven
– Knife and cutting board
– Cheese grater (for the cheese)
Step-by-Step Instructions
First, start by preheating your oven to 400°F (200°C). Next, wash and peel your potatoes, then chop them into bite-sized pieces. In my experience, I like to make the chunks a little larger for heartiness. Boil the potato pieces in salted water for about 15 minutes or until they are fork-tender. Once they’re done, drain the potatoes and set them aside. This stage fills the kitchen with such a comforting aroma!
