Banana Upside Down Cake

Ingredients

  • 3 ripe bananas, sliced
  • 1/2 cup unsalted butter
  • 1 cup brown sugar
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 teaspoon vanilla extract
  • Optional: 1/2 cup chopped walnuts or pecans

Equipment Needed

  • 9-inch round cake pan
  • Mixing bowls
  • Whisk
  • Rubber spatula
  • Measuring cups and spoons
  • Cooling rack

Step-by-Step Instructions

To start, preheat your oven to 350°F (175°C). While it’s warming up, let’s prepare our cake pan. I love using a non-stick 9-inch round cake pan for this recipe. Melt the butter and pour it into the pan, making sure to coat the bottom evenly. Next, sprinkle the brown sugar on top of the melted butter, and arrange the banana slices in a circular pattern. This creates that beautiful upside-down layer. Now, in a separate bowl, cream together the granulated sugar and eggs until light and fluffy. This usually takes about 2-3 minutes with a whisk. The mixture should transform into a lovely pale yellow. (See the next page below to continue steps…)
